Transpiration and water potential of young Quercus petraea (M.) Liebl. coppice sprouts and seedlings during favourable and drought conditionsOriginal Paper

Increased frequency and intensity of drought events consequently affect oak high forests with the process of further decline, compromised growth and questionable natural regeneration. To overcome such difficulties, new adaptive strategies are required. Coppicing, as the oldest way of forest management, might provide some solutions. In our study two contrasting management systems, sessile oak coppice and high forest, were compared at the initial stages of regeneration and forest development. The transpiration of young oak sprouts and seedlings was monitored using sap flow systems during the 2015 growing season. The study of transpiration also included leaf water potential measurements during three measurement campaigns with contrasting weather conditions. Coppice sprouts transpired significantly more than seedlings on the individual tree and stand level during the entire growing season 2015; particularly large differences were observed during drought conditions. Coppice sprouts experienced lower water limitations due to the voluminous and deeper root system as indicated by leaf water potential results. Presented results attribute young coppices as one of the promising adaptable forest management types with a better adaptive strategy at the extreme sites under water limiting conditions.

Soil fertility and productivity estimation of Pinus pinaster Aiton reforestations in Central and Northeast Chalcidice in Northern GreeceOriginal Paper

Maritime pine (Pinus pinaster Aiton) is a notable fast-growing conifer, native to the Western Mediterranean Basin, which is considered suitable for reforestations. This tree species was artificially installed in Chalcidice, Northern Greece, about 40 years ago, in order to upgrade mountain ecosystems. The experiment reported in this paper was undertaken to estimate soil conditions and the development progress of maritime pine in the above reforestations. Samples of mineral soil and forest floor were taken from 12 different sites at 2 locations. Despite age, rather weak maritime pine trees are found in both studied locations. Furthermore, significant accumulation of organic matter and nutrients was observed in both forest floor and mineral soil.

Bioassay and phylogeny of five Iranian isolates of Cucumber mosaic virus from different hosts based on CP gene sequenceOriginal Paper

Using double-antibody sandwich enzyme-linked immunosorbent assay (DAS-ELISA), Cucumber mosaic virus (CMV) was detected in 31 out of 132 symptomatic leaf samples collected from different hosts of Urmia province of Iran, during 2011-2012. In biological assays, five different host isolates caused severe mosaic in Nicotiana species and Capsicum annum without significant difference in severity. Based on phylogenetic analysis of coat protein nucleotide and deduced amino acid sequence, two isolates were clustered into subgroup IA, while other three isolates were grouped into IB subgroup of CMV. All Urmian isolates shared a common MspI, and no EcoRI and BsuRI restriction sites. In contrast to S-IA isolates, the second MspI site was found at 473-476 position of only S-IB isolates, which could be used to differentiate two S-IA and S-IB subgroups. Here, we report the first case of Abutilon theophrasti infection, as a new reservoir weed host for CMV in the world.

Spring, einkorn and emmer wheat species - potential rich sources of free ferulic acid and other phenolic compounds

Einkorn (Triticum monococcum L., subsp. monococcum), emmer (Triticum dicoccum Schuebl [Schrank], subsp. dicoccum) and spring wheat (Triticum aestivum L.) may be rich in hydrophilic antioxidants, therefore being a potential food source with high nutritional properties. The aim of the present study was to assess the content of free ferulic acid (FFA) and total polyphenols (TP) beneficial for human health in wheat varieties and accessions for breeding and production. Einkorn, emmer and spring wheat varieties were assessed for TP and FFA contents in the precise two-year field experiments. The highest FFA content was determined in emmer wheat varieties and spring cv. Granny. High TP content was characteristic for emmer and spring wheat accessions, however also some einkorn ones were characterised by high levels. Year of cultivation showed a significant impact on FFA contents.

Soil phosphorus and potassium availability in long-term field experiments with organic and mineral fertilizationOriginal Paper

The effect of organic, mineral and combined organic and mineral fertilization of soils on the winter wheat yields and nutrient contents in soils was evaluated in long-term field experiments. Two sites with different soil characteristics were evaluated - Lukavec u Pacova (cambisol) and Ivanovice na Hané (degraded chernozem). The type of fertilization influenced wheat yields. Nutrient uptake by winter wheat was higher under nitrogen (N) fertilization, which resulted in a negative balance of phosphorus (P) and potassium (K) and to a decrease of nutrient contents in the more fertile soils at Ivanovice na Hané. Two soil tests (Mehlich 3 method and NH4-acetate method) were used to determine P and K availability. The mineral nitrogen fertilization negatively and significantly affected NH4-acetate extractable concentrations of nutrients in the soils and these were lower in comparison with concentrations of P and K determined by Mehlich 3 method. Relative availability of P in alkaline soils from Ivanovice treated with mineral N increased while the soil pH decreased.

Influence of sowing and harvest dates on production of two different cultivars of sugar beetOriginal Paper

Small-plot trials conducted in 2013-2015 studied the impact of longer vegetation periods (by means of earlier drilling and/or later harvest) on production results of two sugar beet cultivars - one nematode-tolerant cultivar and one cultivar without such tolerance. The trials took place at two sites with different Heterodera schachtii infestation levels. In all trial seasons, root yield was significantly higher in the earlier drilled plots. On average, prolongation of the vegetation period in spring by 13 days increased root yield by 10.9%. Therefore, each day by which drilling is postponed represents a 0.7-0.8% loss of yield. As to sugar content, no statistically significant benefit of vegetation period prolongation by early drilling was found. The spring gain was slightly higher for the non-tolerant cultivar than for the tolerant one on average over all trial seasons. This result confirms the theory that nematodes impact the crop mainly in later stages of vegetation, and early drilling can thus help eliminating, to a certain degree, the risk of nematode damage. In the autumn, root yield increased by 14.3% on average over 39 days. The autumn daily gain was about half of the rate found in the spring. The increase in sugar content was between 0.6% and 1% (abs.) on average. Autumn growth achieved at the non-infested site was much higher than at the infested site.

Effect of biochar application on the content of nutrients (Ca, Fe, K, Mg, Na, P) and amino acids in subsequently growing spinach and mustardOriginal Paper

The objective of this study was to assess the effect of biochar on growth and metabolism of spinach (Spinacia oleracea L.) and mustard (Sinapis alba L.) planted in crop rotation: spinach (spring)-mustard-spinach (autumn). The impact of biochar soil application (5% per mass of soil) on the availability of Ca, Fe, K, Mg, Na and P to plants as well as the content of free proline and total amino acids contents were evaluated at degraded Chernozem soil. The results showed that biochar soil addition significantly increased spinach growth by 102% and 353% in spring and autumn, respectively. Biochar limited plant content of Ca, Mg and Na, however K content increased in all plants. Inconsistent effect was determined for Fe and P content in plants biomass. Total content of free amino acids was higher in plants harvested at amended treatments, except autumn spinach. Biochar increased proline content in all plants in comparison to control. The highest increase was obtained in mustard - by 186%. The results showed a more sensitive reaction of mustard to biochar application than spinach.

Assessment of soil heavy metal pollution in a former mining area - before and after the end of mining activitiesOriginal Paper

Toxicity and persistence of heavy metals, which are accumulated in the environment as the result of diverse industrial activities, represent serious environmental problem worldwide. The intense mineral extraction in mining areas has produced a large amount of waste material and tailings, which release toxic elements to the environment. The aim of the study was to determine in two time horizons (1997, 2015) the heavy metal contents of samples derived from ten sampling sites located in the former mining area of Central Spiš (Slovakia). In order to compare the level of contamination, the contamination factor (Cif), degree of contamination (Cd), and pollution load index (PLI) were computed. Spearman's correlation coefficient was used in order to detect the relationships among heavy metals. A serious situation was found for Hg, Zn, and Cd, which exceeded limit values at all sampling sites within both studied years. In 1997, the average values of contamination factor have shown very high contamination with all studied heavy metals, and moderate contamination with Co. In 2015, the study area was classified as very highly contaminated with As, Hg, Zn, Cu, considerably contaminated with Ni, Cr, Pb, and Cd, while Co contamination was not detected. Since 1997 till 2015 the pollution load index decreased by about 38%, nevertheless even then almost all sampling sites were classified as heavily polluted. Despite the fact that mining activities were stopped or limited at the beginning of the 21st century, the presence of heavy metals in soils remains at a serious level. The high level of contamination is a result of heavy metal persistence and non-biodegradability.

Effect of treated sewage effluents on plant cover and soil at Wadi Al Rummah, Qassim Region, Saudi ArabiaOriginal Paper

The effect of tertiary treated sewage effluents on the plant cover and the physico-chemical properties of the surface soil (environmental characteristics) before and after the Al Rass sewage plant was investigated. The data were illustrated via TWINSPAN and canonical correspondence analysis (CCA). Five sites, 1 km apart, after the discharge point and one site (control site) before the sewage plant were examined. Eleven vegetation characteristics and ten physico-chemical properties of surface soil were studied. The obtained results revealed that discharging of treated sewage effluents altered quantitatively and qualitatively the pattern of species dominance and the physico-chemical properties of the soil. Soil electrical conductivity (EC), total dissolved solids (TDS), organic matters (OM), soluble cations, and soluble anions showed increased values compared to the control (resulting in salination), whereas soil pH decreased as a result of sewage disposal. It was also noticed that the physico-chemical values of EC, TDS, Ca++, Mg++, Na+, Cl- after the sewage plant were higher than the permissible limits for agriculture recommended by FAO, whereas K+ and HCO3- were within the recommended values. The dominance of Suaeda vermiculata Forssk. ex J.F.Jmel. after the sewage plant and its absolute absence before the sewage plant may be used as an environmental bioindicator of pollution.

Mesh repair of a large ventral hernia with interposition of omentum in a calf: a case reportCase Report

A one-month-old, Piedmontese female calf was admitted to the Department of Veterinary Sciences, University of Turin, for repair of a large ventral hernia. A large ventral hernia, approximately 20 cm long and 15 cm large was noticed extending from 3 cm caudal to the umbilicus down to the pubis. At ultrasonography the hernia content was represented by small intestine and omentum and no adhesions to the hernial sac could be detected. The hernial sac was composed by skin only. Because of the large dimensions of the defect and the economic value of the animal, surgical correction was recommended to the owner. A prosthetic implant with a polypropylene mesh was elected due to the dimension of the abdominal defect. The implant was placed intra-abdominally with the interposition of the omentum between the mesh and the underlying viscera. Two and six months after surgery follow-ups were performed and a positive outcome was confirmed. This is the first report of ventral hernia repair in large animals that combines the use of a tension-free polypropylene mesh with the interposition of the omentum between the viscera and the mesh. This procedure is safe, cost-effective and not associated with major complications.

Double symmetrical aortic arch in a Czechoslovakian wolfdog - surgical treatment and health assessment four years after treatment: a case reportCase Report

The paper describes a double symmetrical aortic arch in a dog trapping the oesophagus. Thoracotomy was performed in the fourth inter-costal space under general, isoflurane-maintained, anaesthesia. Cutting of the arterial ligament failed to free the oesophagus. Dissection of further vascular structures revealed the left and right aortic arches to be of similar diameter. A vascular clamp was put on the left arch for 10 min, while the patient's cardiovascular parameters were monitored. The lack of significant cardio-respiratory symptoms indicated the necessity of ligating and cutting the left aortic arch. Removal of additional tissue from the region of the cut on the left arch completely released the oesophagus which was continuously monitored by video-oesophagoscopy. The chest was closed according to a standard thoraco-surgical procedure. The cutting of the left aortic arch and the release of the surrounding tissue restored the normal position of the oesophagus. After surgery, the animal was returned to its owners in a very good condition. Control examination showed complete amelioration of clinical symptoms and subsequent normal development of the dog. Intra-operative clamping of the left aortic arch with simultaneous monitoring by oesophagoscopy ensured a positive outcome of the surgery of the intra-operatively diagnosed double aortic arch.

Evaluation of poly(lactide-co-glycolide)/hydroxyapatite nanofibres for reconstruction of critical-sized segmental bone defects in a canine modelOriginal Paper

The treatment of segmental bone defects is a challenging problem for both human and veterinary medicine. Various biomaterials have successfully been used to treat these defects. Numerous recent in vitro studies have shown the potential of treating bone tissues using poly(lactide-co-glycolide)/hydroxyapatite (PLGA/HAp) nanofibres, which are fabricated using electrospinning. The purpose of this study was to evaluate the possibility of using a bone scaffold of PLGA/HAp nanofibres to repair critical-sized segmental bone defects in a canine model. The experimental bone defects were created in a 15 mm-long region of the radius. The area of the defect in each of 10 Beagle dogs was treated with a transplant of PLGA/HAp nanofibres in gelatin. The control group consisted of five Beagle dogs with similar defect sites that were not treated. Radiological and histological examinations were used to monitor the response of PLGA/HAp nanofibre-treated canine bone. Micro-computed tomography (micro-CT) was used to evaluate bone mass parameters 18 weeks after treatment in the experimental bone defect group. Our radiological and histological results showed that the PLGA/HAp nanofibre is biodegradable in the defect sites and replaces new bone tissue. Micro-CT showed that bone mass parameters were significantly (P < 0.05) increased in the critical-sized segmental bone defects of PLGA/HAp nanofibre-treated animals as compared to those of untreated animals. Based on these results, we conclude that PLGA/HAp nanofibres may be used as a bone scaffold biomaterial in canines.

Regional environmental governance: the NAFTA case

The United Nations Conference on Environment and Development held in Rio de Janeiro in 1992 elaborated the idea of sustainable development. A comprehensive document called the Agenda 21 provided an explanation how to achieve a sustainable economic development. Along the tools presented in the document, there emerged in practice a new regionalism which is based on the preferential trade agreements. Currently, regional agreements are of a more complex nature, so that they may include environmental cooperation, too. The aim of this paper is to illustrate, on the case of the North American Free Trade Agreement (NAFTA), a possible approach of regional agreements to environmental cooperation. The paper is divided into four sections. The first one summarizes a general approach to addressing environmental issues within the integration groupings. The second tries to answer the question of whether the NAFTA confirms the general approach to the regional environmental governance. The third deals with the meaning and the failure of the regional governance for the assessment of the cross-border impact of the NAFTA/NAAEC on the environment. The fourth and last section gives an answer to whether the North American Agreement on Environmental Cooperation (NAAEC), as the environmental part of the NAFTA, is a good basis for the effective environmental governance in North America.

Bioeconomy as a new S-curve for Thai economyOriginal Paper

Thai economic growth lags behind all other ASEAN countries because its export dependence along with the political and economic vulnerabilities. With the growing bioeconomy worldwide, Thailand needs a clear bioeconomy roadmap as a new growth engine for its economy. Four potential clusters to build bioeconomy in Thailand include the bioenergy, bio-based industry, bio-food and bio-agriculture, and bio-medicine and health. There are roadmaps for only the first two clusters. The paper discusses the potential bio-based products for the bio-food and bio-agriculture as well as bio-medicine and health and proposes the use of the Pracharath strategy to build bioeconomy in Thailand with the main objective of creating the sustainable economy. Since a smart community is a key driver for the sustainable economy, five steps to smart community proposed in the paper will immune communities in the rural area of Thailand, make them self-reliant, and remove the dependency culture.

A global meat tax: from big data to a double dividendOriginal Paper

The Food and Agriculture Organization of the United Nations (FAO) emphasizes the right of everyone to have access to safe, sufficient and nutritious food in its Rome Declaration. This article suggests how this noble FAO goal can be achieved. We suggest that a first step could be the introduction of a global meat tax, where the size of the negative externalities from meat production could be calculated based on foresight and big data. Applying the tool of a global meat tax will lead to a "double dividend" as negative externalities are reduced and at the same time huge tax revenues will be generated which could be used to make further steps in the direction of achieving the stated FAO goal in the Rome Declaration.

Variety in local development strategies and employment: LEADER programme in AndalusiaOriginal Paper

For the period 2007-2013 LEADER became the fourth axis of rural development policy. One of the main characteristics of LEADER is that it adopts a bottom-up approach. Local Action Groups (LAGs) have to define and implement area-based local development strategies (LDSs). In this paper, we examine the relationship between variety in the LDSs implemented by LAGs and employment safeguarding over the programming period 2007-2013 in Andalusia, the most populated region of Spain. Firstly, we construct several indicators to capture differences in the number of projects carried out, the grants awarded, the investments made and the safeguarded employment. Secondly, we carry out an exploratory factor analysis. We use cluster analysis to classify LAGs applying similar LDSs. The results obtained show that there is no ideal strategy for employment safeguarding and that spending high amounts of money in a few numbers of projects does not guarantee success. Thus, most LAGs do not show any clear specialisation pattern but obtain moderate results in terms of employment safeguarding. This supports the idea that LAGs need to have sufficient flexibility to find a balance among the different objectives of the rural development policy and to translate this balance into the funding of projects.

Bankability of a public private partnership in agricultural sector: A project in Sub Saharan AfricaOriginal Paper

A public private partnership can be an effective approach to deal the projects with modern agricultural development in Sub Saharan Africa. A former financial analysis of a development project, carried out by the authors, showed that public and private partners can effectively join in a mutually satisfactory venture capital. The same project is now complemented with a bankability study, considering lenders options, equity allocation, collaterals and likely applicable interest rates, available cash flow and sustainable debt service repayment to provide a through financing scenario for each partner's perspective assessing the relevant Debt Service and Loan Life Cover Ratios. Cash flow and interest rates fluctuation impacts are eventually investigated with a sensitivity analysis to prove the robustness of the proposed scenario.

Approaches to estimation the farm-level economic viability and sustainability in agriculture: A literature reviewReview

Estimation of farm economic sustainability and viability became more topical when redesigning the Common Agricultural Policy which should stabilise farm income and make agribusiness more viable and sustainable (typically in Czech areas facing natural constraints). The key question is how to calculate the income of farms or farm households not only to survive but also to grow sustainably. The article summarises and compares knowledge from 51 studies to provide a comprehensive discussion on different ways how to measure economic viability and sustainability to set income support for farms in the areas with natural constraints optimally. The authors found family farms and off-farm income as important limitations of FADN database (Farm Accountancy Data Network) for evaluation of the economic sustainability of farm household. Moreover, some financial ratios (Return on Assets - ROA and assets turnover) are not suitable viability indicators for farms with a high share of hired land (typically large legal entities). Joining family farms and legal entities, the authors recommend using modified Farm Net Value Added (MFNVA) allowing for opportunity costs of own land and non-land assets. The average wage in the economy or region is a better proxy for opportunity labour costs of unpaid work rather than average agricultural wage.

Czech consumers' attitudes to food wasteOriginal Paper

The paper deals with Czech households' subjective views on food waste. It examines households' attitudes to food waste, including the causes of food waste. The primary data were obtained via a questionnaire survey with 1 582 respondents. The analyses allowed the identification of three categories of Czech households with different attitudes to food waste and its causes. These findings provide a basis for a proper selection of corrective measures aimed at amending or even completely transforming the current behaviour.

Risk in agriculture: An overview of the theoretical insights and recent development trends during last decade - A reviewReview

The main purpose of this paper is to provide a detailed overview of the theoretical insights and recent development trends on risk in agriculture. It focuses on the synthesis and analysis of the research studies published over the period from 2008 through 2018 and aims to identify major findings obtained over the recent decade and determine the areas for future research. This paper reviews a total of 397 unique publications retrieved from the international journals accessible in the Web of Science database. Based on different criteria deployed by the scientometric analysis, the selected articles have been reviewed and classified. The bibliometric analysis includes the citation volumes, authors, names of journals, research areas, affiliations, and contributing countries. The network analysis includes the examination of keywords. This article provides an opportunity for scholars, practitioners, and policy-makers to understand and manage risk in agriculture and at the same time presents a roadmap for future research in this field.

The influence of gamma-irradiation on the formation of free radicals and antioxidant status of oregano (Origanum vulgare L.)

The influence of various gamma-radiation dose absorptions on oregano (Origanum vulgare L.) solid samples was monitored by means of electron paramagnetic resonance (EPR) spectroscopy. Further, the antioxidant activity of oregano methanol/water extracts was characterised using DPPH (1,1-diphenyl-2-picrylhydrazyl free radical); thiobarbituric acid reactive substances (TBARS); ferric reducing power (FRP); and total content of phenolic compounds (TPC) assays. EPR spectroscopy was used for the investigation of the influence of the absorbed dose on the character of the paramagnetic structures formed, as well as for their thermal stability and life-time characterisation. EPR spectrum of the reference (non-irradiated) sample represents a broad singlet line with unresolved hyperfine splitting, attributable to Mn(II) ions, upon which the additional sharp EPR signal (g = 2.0022, ΔBpp ≈ 1 mT) is superimposed, assigned to stable semiquinone radicals produced by the oxidation of polyphenolic compounds present in plants. The additional paramagnetic structures of different origin (mostly of cellulose and carbohydrate), possessing diverse thermal stability and life-time, were identified in the gamma-irradiated samples. Immediately after irradiation, a statistically significant increase was observed of the TBARS values and the total content of phenolic compounds in methanol/water oregano extract. The alterations of the antioxidant properties of oregano extracts with the time after the radiation treatment were also monitored. A substantial time-dependent decrease of antioxidant activity was observed, probably as a result of storage, with both irradiated and non-irradiated oregano samples, as obvious from the ferric reducing power test and the content of total phenolic substances. The influence of irradiation and subsequent storage of oregano samples on the DPPH radical-scavenging ability was only negligible.

Historically, species of the family Lamiaceae have enjoyed a rich tradition of use for flavouring, food preservation, and medicinal purposes, due to both their curative and their preventive properties. It is well known that each species has a special, complex mixture of bioactive compounds in which each component contributes to its overall bioactivity. Their value lays in the production of a wide range of secondary metabolites with potent antibacterial, antioxidant, anti-inflammatory, antimicrobial, antiviral, and anticancer activities. This review focuses on the Lamiaceae species and their secondary metabolites encompassing a wide array of beneficial functions and their applicability as sources of functional foods. It could help in addressing specific consumer needs as healthy diet is a part of the lifestyle that maintains or improves overall health.

Hepatitis A and E viruses (HAV and HEV) are recognised as food- and water-borne infections and shellfish are a well-documented source of these viruses. The presence of HAV and HEV in mussels has not previously been investigated in Bosphorus, Istanbul, Turkey, and therefore the aim of this study was to investigate the frequency of HAV and HEV in mussels collected from this location. A total of 92 pooled samples representing 736 mussels originating along the Bosphorus coast were collected from fish distributors. RNA was extracted using the RNeasy Plant Mini Kit and a TaqMan real-time RT-PCR was performed using primers specific to HAV and HEV. Amongst the 92 pooled samples tested, 3 (3.3%) were found to be positive for HAV by the TaqMan real-time RT-PCR. No HEV was detected in any of the mussels tested. A 174 bp product was observed on gel electrophoresis with HAV positive samples detected by SYBR Green real-time PCR after reverse transcription. This product was sequenced and confirmed to contain HAV sequences by alignment using the data in GenBank. This is the first report describing the presence of HAV in mussels harvested in the Bosphorus, Istanbul, Turkey, indicating the potential contamination of aquatic environment and risk to public health.

The paper pertains to the issue of quality assurance methods. Particular emphasis is placed upon the examination of hazards and possible product defects in food processing. At present, Polish regulations oblige any food processing entity to implement HACCP system. The system is perceived as a universal vaccine preventing the emergence of possible hazards or reducing the risk to an acceptable level. As far as defects are concerned, these are either disregarded altogether or do not occur at all. Meanwhile, the practice proves the case is not so. The research aspect of the paper revolves around an attempt to transplant solutions primarily applied in the automotive sector onto food processing industry. The practical aspect of the paper is manifested in the analysis of causes behind defects and hazards conducted on the basis of bakery industry. Potential hazards and product defects emerging from the process were identified in the course of the study. In addition, in order to eliminate these, their level was established with the application of various methods.

Antioxidant properties and resveratrol content of Polish Regent wines from Podkarpacie regionFood Analysis, Food Quality and Nutrition

The antioxidant properties of cool-climate Regent wines from Podkarpacie region, Poland were investigated. Total polyphenols, total flavonoids, total monomeric anthocyanins, trans-resveratrol concentration, radical scavenging ability using 1,1-diphenyl-2-picryl-hydrazyl (DPPH) and total antioxidant capacity with TEAC and FRAP methods were measured. The average contents of the compounds determined for Regent wines were comparable to the respective data available in literature found for warm-climate wines. Correspondence Analysis of the data revealed the relation of total polyphenols content and antioxidant capacity and radical scavenging ability of studied wines, and in lesser extent correlation with total flavonoids content. The total monomeric anthocyanins content and resveratrol concentration were poorly related to the total polyphenols content and antioxidant capacity.

Onion skin is a waste produced in thousands of tons annually in the European Union. It is a rich natural source of flavonoids and its water extracts (as an environmentally friendly solvent) could be used as an antioxidant material for meat products. Therefore, antioxidant properties of onion skin water extracts (OSWEs) were tested on cooked pork patties. Pork patties were divided into five treatments: control (no antioxidant), 10 and 20% (w/w) of yellow OSWE, and 10 and 20% (w/w) of red OSWE. Antioxidant activity, total polyphenols, thiobarbituric acid reactive substances (TBARS), and sensory analysis were assessed. Patties with added antioxidants showed significantly (P < 0.05) higher antioxidant activity and total polyphenol content. Samples with OSWEs, after 5-day storage (5°C), had significantly (P < 0.05) lower TBARS values compared to control. Two main phenolic compounds were identified in OSWEs by liquid chromatography - mass spectrometry using electrospray ionisation in negative mode: quercetin (m/z 301) and quercetin monoglucoside (m/z 463). OSWEs demonstrated the potential to be used as a source of natural antioxidants with strong antioxidant activity in meat products.

Fungal contamination spices from Indonesia with emphasis on Aspergillus flavusFood Microbiology and Safety

Filamentous fungi were isolated from ten spices collected from markets in Indonesia. The aim was to enumerate fungal contamination and to determine the toxigenicity of Aspergillus flavus strains on each of the spices. Viable fungal populations were determined using a dilution method. Toxigenicity of Aspergillus flavus was determined by culture on a quick screening coconut agar and by PCR using four sets of primers specific for aflatoxin pathway genes. All the tested spices were contaminated by storage fungi, Species of Aspergillus was the most commonly isolated moulds followed by species of Fusarium, Mucor, Penicillium and Rhizopus. The greatest number of Aspergillus flavus isolates were found on white pepper, followed by nutmeg, cardamom, and black pepper. The greatest number of Aspergillus chevalieri isolates were found on coriander, followed by nutmeg. Fifty strains of A. flavus were isolated, all of the strains produced large sclerotia and biseriate conidiophores. Their toxigenicity was assayed by the presence of yellow pigment on a quick screening coconut agar medium and PCR amplification of regulatory and structural genes in the aflatoxin pathway.

l-Ascorbic acid content and antioxidant capacity in less-known fruit juicesFood Analysis, Food Quality and Nutrition

Eight less-known juices are characterised and contents are monitored of selected substances and nutritional parameters. 100% juices were produced of Aloe Vera, Aronia, Blackcurrant, Black elder, Cranberry, Malpighia, Pomegranate and Seaberry by pressing, including the flesh. Total phenolic compounds (TPC) and ascorbic acid (AA) content were analysed as other parameters. The juices were measured on total antioxidant capacity (TAC) as the content of trolox, where the highest levels were found for Malpighia 63.2 mM, when the value was significantly different (P < 0.05) compared with all the other juices, while Aloe Vera had lowest levels with 0.4 mM. The Aronia juice possessed the highest level of TPC (8297 mg of GAE/l). TAC levels very well corresponded with TPC levels while AA content actually did not correlate with TAC values. In addition to the objective analysis, the juices were subjected to a sensory evaluation. Blackcurrant presents an attractive product from the sensorial aspect as well as in terms of the nutritional value.
